Another year, another time to challenge myself and make some sacrifices. This year’s sacrifices include dairy, eggs, and meat. Whoa mamma.
So what does going vegan mean? Being very careful with what I eat. Not surprisingly, when I told people I would do it they thought I was crazy. In fact, I thought I was crazy. I love eggs. I love bacon. I love steak. I love cheese. But really, I love food. At the end of the day it means I am more than willing to eat anything. Now I just have another set of options, and I have to say I’m very excited.
I did a Whole Foods trip today to help stock up my fridge. I stuck pretty close to my normal grocery list, but just happened to buy more vegetables as well as a few meatless / tofu based options for another way to get my protein. I actually didn’t even spend that much more. Here’s the beautiful lineup.
Today I did fast, but I started off with my new favorite smoothie (mixed berries, banana, almond/soy milk, + greens ). Yesterday I put some kale in it, and today, I used this dried green juice powder called Aloha’s Daily Good. It’s not bad – and it’s a much cheaper alternative to freshly pressed juice at only $2-3 a pack. Here’s a pic and a list of the ingredients:
My first dinner was from Just a Smidgen‘s blog, called High Octane Spicy Cumin Vegan Bowl. It was a bowl of absolute deliciousness. Spinach, kale, red onion, red pepper, garlic, roasted butternut squash, roasted chickpeas, black beans, and avocado. Yummy!
